Meet your new side dish go-to. Our Easy Ranchero Beans recipe is so full of flavor it may even upstage your main dish. To make ranchero style beans, just sauté fresh ingredients in a saucepan then mix in a can of Old El Paso™ Traditional Mexican Refried Beans, it's that easy! These ranchero beans are quick, satisfying and, a simply amazing addition to any Tex-Mex meal!
📝 Ingredients
- 1 tablespoon vegetable oil
- 1 large onion, chopped (about 1 cup)
- 2 medium tomatoes, chopped
- 2 cloves garlic, chopped
- 1 teaspoon salt
- 2 tablespoons lime juice
- 1 jalapeño chile, chopped
- 1 can (16 oz) Old El Paso™ Traditional Refried Beans
- 1 can (15 oz) Progresso™ black beans, drained, rinsed
- 1 cup roughly chopped fresh cilantro
- Cooked rice or tortilla chips, as desired
- 1/2 cup crumbled queso fresco cheese, if desired
👨🍳 Instructions
- 1In 4-quart saucepan or Dutch oven, heat vegetable oil over medium-high heat. Add onion; cook until starting to soften. Stir in tomatoes and garlic, cooking until tomatoes release their juices. Stir in salt, lime juice, chile and beans. Cook until mixture comes to a simmer. Stir in cilantro; continue to simmer 5 minutes.
- 2Serve beans with rice or as a dip for tortilla chips. Top with cheese.
