📝 Ingredients
- 1 1/2 pounds flank or skirt steak (cut into thin slices)
- 2 Tablespoons carne asada seasoning (read notes)
- 1 medium onion (sliced)
- olive oil (as needed)
- 1 lime (juice)
- 16 small sopes
- 2 cups lettuce (shredded)
- 1 cup refried beans
- 1 1/2 cups pico de gallo
- queso fresco (or your favorite cheese)
- 1 1/2 cups guacamole
- salsa
- oil for frying (as needed)
👨🍳 Instructions
- 1Place meat and onions on a plate and generously sprinkle with carne asada seasoning. Squeeze the juice of half a lime and toss for 1 minute.
- 2Allow the beef to marinate for at least 1 hour or overnight.
- 3Lightly oil a cast iron skillet or a grilling pan. Add the meat and onions in one layer.
- 4Grill until the meat is done to your desired level of tenderness (read notes) and the onions are lightly golden but still with a crunch.
- 5Remove the meat from the pan and cut it into small pieces. Return to the pan and mix with the onions. Set aside.
- 6Heat a bit of oil in a large frying pan and lightly fry the sopes on both sides. Place them on a plate lined with paper towels to remove excess oil.
- 7Spread a good spoonful of refried beans on each sope and top with carne asada and onions.
- 8Pile with shredded lettuce, pico de gallo, and guacamole.
- 9Finish with a good sprinkle of queso fresco and serve with your favorite salsa.
