These gooey quesadillas are made with turkey leftovers flavored with salsa and packed into a warm tortilla. Serve with guacamole and pico de gallo for a quick lunch or appetizer.

📝 Ingredients

  • 2 cups turkey leftovers (shredded)
  • 10 tortillas (wheat flour or corn)
  • 2 cups melty cheese (use shredded Mexican blend, Monterey Jack, or mozzarella)
  • 1-2 cups salsa roja (or your favorite Mexican salsa)
  • 1 1/2 cups refried beans
  • vegetable oil (as needed)
  • guacamole
  • pico de gallo
  • salsa

👨‍🍳 Instructions

  1. 1Place turkey in a pan and add a few tablespoons of salsa roja, start with 1-2 then add more to taste.
  2. 2Reheat stirring constantly for 4-5 minutes over medium heat. Set aside.
  3. 3Heat a cast-iron skillet or pan over medium-high heat.
  4. 4Brush the skillet with a bit of cooking oil and place a tortilla.
  5. 5Spread one spoonful of refried beans in one side and add some cheese on top.
  6. 6Follow with some of the turkey mixture and fold the tortilla over the filling, creating a half-moon shape. Press down gently with a spatula.
  7. 7Cook for about 2-3 minutes per side or until the cheese is nicely melted and the tortilla becomes crispy and golden brown.
  8. 8Repeat to make 10 quesadillas and serve immediately.
