These roasted tomatoes are sweet, juicy, and downright delicious. A drizzle of extra virgin olive oil, a sprinkle of simple seasonings, and a hot oven turn simple tomatoes into a tender, flavorful Southern favorite.

📝 Ingredients

  • 2-3 lbs Campari or vine-ripened tomatoes (sliced in half)
  • 2-3 Tbsp olive oil
  • 1-2 Tbsp balsamic glaze (OR 1-2 teaspoons balsamic vinegar and a 1/2 teaspoon granulated sugar)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2-1 tsp crushed red pepper flakes
  • 4 large garlic cloves (minced)
  • 2-4 oz feta cheese or burrata
  • chopped fresh basil leaves

👨‍🍳 Instructions

  1. 1Preheat oven to 425°. Spray a large rimmed sheet pan with cooking spray or brush with olive oil.
  2. 2In a large bowl, toss tomatoes with oil, balsamic glaze (or vinegar and sugar), salt, black pepper and garlic. Spread on the prepared baking pan in a single layer.
  3. 3Transfer pan to the oven and roast until tomatoes are beginning to burst and char slightly, about 20 to 25 minutes, turning the pan halfway through.
  4. 4Remove from the pan to a platter (or drain liquid, if serving straight from the pan).
  5. 5Crumble cheese on top and serve immediately garnished with fresh basil.
