Fluffy Gluten-Free Waffles (Dairy-Free Option)

This gluten free waffle recipe has a light airy interior with a perfectly caramelized outside. Lightly sweet with a hint of vanilla, this is the best GF waffle recipe.
Ingredients
- 2 1/2 cups gluten free flour blend (with xanthan gum)
- 2 Tablespoons granulated sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon kosher salt
- 3 large eggs (divided)
- 1 3/4 cup whole milk (see notes)
- 4 Tablespoons unsalted butter (melted and cooled)
- 1 teaspoon vanilla extract

Dry: Place flour, baking powder, sugar, and salt in a large bowl. Whisk to combine.

Wet: In a small bowl, mix egg yolks, milk, butter, and vanilla extract. Set aside.

Beat: In a separate medium bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note

Mix: Add the egg yolk mixture to the dry ingredients and stir to combine. Gently fold in the egg whites.

Preheat: Let the batter rest while you preheat the waffle iron according to the manufacturer's directions or to 400°F if your waffle maker has a temperature gauge.

Waffle: Drop large spoonfuls onto greased waffle iron until most of the wells are covered. Close the lid and cook for about 3-5 minutes or until golden brown. Belgian waffle makers will cook closer to 5 minutes while smaller models like the one in the photos will be closer to 3 minutes.
