Apple Coleslaw

Ingredients
- 2 cups green cabbage (shredded (about 1/2 head of a small cabbage))
- 2 tart red apples (cored and julienned)
- 1 carrot (shredded)
- 1/2 cup plain Greek yogurt
- 1/4 cup apple cider vinegar
- 2 Tablespoons honey
- 2 Tablespoons orange juice
- 2 Tablespoons poppy seeds
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup extra-virgin olive oil

Toss the veggies and apples in a large bowl. Pour the dressing over the veggies and mix until evenly coated. Season with salt and pepper to taste before serving.
