Lemon Blueberry Waffles

These Lemon Blueberry Waffles are crisp on the outside, fluffy inside and packed with blueberries and bright lemon flavor! This lemon blueberry recipe is easy to make with simple pantry ingredients you most likely have at home!
Ingredients
- 2 tablespoons granulated sugar
- 1 tablespoon lemon zest
- 1 3/4 cup all-purpose flour
- 1 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 3/4 cup milk
- 1 tablespoon lemon juice
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 stick unsalted butter (melted and slightly cooled)
- 1 cup blueberries
- Nonstick cooking spray (oil or melted butter)
- Maple syrup
- Powdered sugar
- Whipped cream

Prep: Preheat the waffle iron according to the manufacturer's instructions.

Mix lemon sugar: In a large bowl, combine the sugar and lemon zest. Rub the sugar mixture with your fingertips. This releases the natural lemon oils of the zest into the sugar making it fragrant.

Mix dry ingredients: To the same bowl add the flour, baking powder, baking soda and salt. Set aside.

Mix wet ingredients: In a medium bowl, whisk together the milk, lemon juice, eggs and vanilla. Whisk the wet mixture into the flour mixture until a batter is formed.

Add wet ingredients into dry ingredients: Whisk in the melted butter until just incorporated making sure you don’t overman the batter. With a spatula, fold in the blueberries until combined.

Cook and serve: Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour some of the batter onto the greased waffle iron. Close the lid and cook until the waffles are a deep golden brown and slightly crisp, about 3-5 minutes. Repeat with the remaining batter. Serve.
