Traditional recipe for spetzofai (spetsofai) - Greek sausages with peppers and tomato recipe

📝 Ingredients

  • 450 grams loukaniko (Greek sausage) (cut into chunks)
  • 1/4 cup olive oil
  • 2 red onions (cut into chunks)
  • 3 bell peppers (see Recipe Note) (cut into chunks)
  • 3 garlic cloves (finely chopped)
  • 1 tbsp tomato paste
  • 4 tomatoes (cut into chunks)
  • 2 teaspoon dry oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4-1/2 teaspoon red chili flakes
  • 1/2 cup water
  • 1/4 cup ouzo
  • 2 tbsp chopped fresh parsley

👨‍🍳 Instructions

  1. 1Saute: Heat the olive oil in a large frying pan over medium high heat and then add the sausage. Cook for approximately 15 minutes turning the sausage over midway through the cooking time. Remove the cooked sausage from the frying pan and set aside on a plate.
  2. 2Saute: Without cleaning the frying pan add the onion and saute for approximately 5 minutes, stirring occasionally. Add the peppers and garlic and cook for an additional 5 minutes. Next, add the tomato paste and the tomatoes. Cook, stirring regularly for an additional 5 minutes.
  3. 3Cook: Add the oregano, paprika, salt, chili flakes and water. Return the sausage to the pan. Stir and cover. Cook for approximately 5 minutes or until the peppers are soft. Continue to cook, uncovered, until the sauce reaches the desired consistency. Add in the ouzo, stir and cook for a minute or two more.
  4. 4Serve: Sprinkle with fresh parsley, serve immediately and enjoy!
