Spicy Miso Green Beans

Fresh green beans are sautéed to perfection in a flavorful miso garlic sauce with just the right amount of heat. Spicy green beans with miso butter are an easy, umami-packed side dish you’ll want to make all week long!
Ingredients
- 1 pound fresh green beans (washed and trimmed)
- 2 Tablespoons unsalted butter (or use vegan butter or olive oil)
- 3 Tablespoons miso paste (gluten free, if needed)
- 1 Tablespoon garlic chili paste (or sriracha)
- 1 Tablespoon honey (maple syrup for vegan)
- 2 teaspoons ginger paste (or fresh grated ginger)
- 1/4 cup chicken broth (or water, warmed)
- 5 green onions (thinly sliced)
- sesame seeds ( optional)

Prep beans and sauce: Wash and trim the ends of the green beans. In a small bowl, whisk together the miso, ginger, chili paste, garlic, honey and broth, then set aside.

Sauté green beans: Heat the butter in a large skillet over medium heat. Add the green beans and toss to coat.

Add sauce: Add the miso sauce to the green beans and stir to coat. Cover the skillet and cook for 6 to 8 minutes, until the green beans are bright green and al dente.

Serve: Uncover and reduce the sauce, 1 to 2 minutes. Stir in the green onions and sprinkle with sesame seeds.
