📝 Ingredients

  • 8 ounces lotus root ((about 1 medium root))
  • 1-2 tablespoons sesame oil
  • 2 cloves garlic (chopped)
  • 1 teaspoon fresh ginger (grated)
  • 1/4 cup red bell pepper
  • 2 green onions (chopped extra for garnishing)
  • 1/4 teaspoon Cayenne pepper
  • 1 teaspoon sesame seeds (for garnishing (optional))
  • 1/4 cup vegetable broth
  • 2 tablespoons maple syrup
  • 2 tablespoons Bragg's liquid aminos (tamari, or coconut aminos)

  1. 1--- To Cook The Lotus Roots ---
  2. 2Prepare the lotus roots. Wash the lotus root, trim the ends, and then peel. Cut it into thin, beautiful slices and set them aside in a bowl of cold water for 10 minutes..
  3. 3Prepare all the veggies, including bell pepper, garlic, ginger, and green onion, and set aside.
  4. 4Combine the sauce ingredients in a bowl: vegetable broth, maple syrup, and Bragg's Liquid Aminos. Set aside
  5. 5Heat oil in a large skillet on medium-high heat. Add the lotus root slices in a single layer and saute on each side until they turn a gorgeous golden brown; repeat until all slices are done. The sight of these golden brown slices is a feast for the eyes. Set them aside on a plate.
  6. 6Add garlic, ginger, green onions, bell pepper, and saute until fragrant.
  7. 7Stir in lotus root slices and prepared sauce and cook until the sauce is thickened. Add cayenne pepper and garnish with sesame seeds and the remaining green onion.
