Ingredients

  • 2 Tablespoons unsalted butter (or olive oil for vegan)
  • 2/3 cups yellow onion (finely chopped)
  • 4-5 cloves garlic (minced)
  • 1 Tablespoon fresh ginger (grated (or a puree))
  • 4 cups vegetable broth
  • 2 1/2 Tablespoons soy sauce
  • 1/8 teaspoon white pepper
  • 3 ounces fettuccine noodles (or noodle of choice)
  • 1 cup frozen peas
  • 1/2 cup cilantro (chopped)
  • 4 scallions (chopped)
  • Sesame seeds (optional)

Instructions

    In a large stock pot, melt butter over medium-high heat. Add onions and cook for 3-4 minutes. Add garlic and ginger and saute for another minute.

    Slowly pour in vegetable broth while scraping the bottom of the pan. Add soy sauce and white pepper, then increase heat and bring to a boil.

    Add noodles and cook according to package instructions until al dente. For the last minute of cooking time, add frozen peas.

    Serve with cilantro, scallions, and sesame seeds as desired.
