Mexican Tortilla Casserole

Mexican Tortilla Casserole is delicious layers of tender tortillas, seasoned ground turkey, a flavorful sauce and plenty of melted cheese. It's an easy, family friendly dinner that's ready in about 40 minutes!

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion (chopped)
  • 1 lb. lean ground turkey
  • 3 cloves garlic (minced)
  • 2 tablespoons taco seasoning
  • 15 ounces fire roasted diced tomatoes (see note)
  • 4 ounces diced green chilies (optional)
  • 3 tablespoons tomato paste
  • 1 cup corn (fresh, frozen or canned)
  • 15 ounces black beans (rinsed and drained)
  • Salt and freshly ground black pepper (to taste)
  • 1 lime (juiced, plus more lime for serving)
  • 1/4 cup freshly chopped cilantro
  • 6 tortillas (soft taco sized, halved; regular or whole wheat; or use corn tortillas for gluten-free)
  • 1 1/2 cups grated cheese
  • Cilantro leaves, sour cream and sliced jalapeños (for serving (optional))

Instructions

    fry tortillas: Preheat the oven to 350 degrees. Heat a small amount of oil in a skillet over medium heat. Cook each tortilla for 20–30 seconds per side until lightly golden (not crispy). Transfer to a paper towel-lined plate.

    cook ground turkey: Heat the olive oil in a large sauté pan over medium heat. Add the onion and cook 5 minutes or until softened. Add the ground turkey and break up with a wooden spoon. Cook 5 minutes or until almost cooked through. Add the garlic and taco seasoning and cook 30 seconds more.

    finish preparing filling: Add the tomatoes and scrape up the browned bits from the bottom of the pan. Stir in the tomato paste, corn and beans and cook for 5 minutes longer. Remove from heat and add salt and freshly ground pepper, to taste, then stir in the lime juice and chopped cilantro.

    Bake: Grease a 13x9" baking dish with cooking spray. Spread 1/3 of the turkey mixture over the bottom of the baking dish. Layer with half of the tortillas, then top with another 1/3 of the turkey mixture followed by 3/4 cup of the grated cheese. Repeat with the remaining tortillas, ground turkey mixture and cheese. Bake for 20 minutes or until bubbly and heated through.

    Garnish and serve: Remove from heat and let stand 10 minutes before serving. Serve with additional cilantro, sour cream and sliced jalapeños if desired. Enjoy!
