Cucumber Yogurt Salad (Khyar bi Laban)

This Middle Eastern cucumber yogurt salad is so refreshing and creamy. The addition of cucumber, mint, garlic, and lemon juice just makes it one of the most popular salads in our household. It pairs so well with many dishes and proteins and takes less than 10 min to prepare.

Ingredients

  • 2 cups Plain yogurt
  • 2 Persian cucumber, finely diced
  • 1.5 tbsp Dried mint, crushed
  • 1 Garlic clove, grated
  • 1/2 Lemon's juice
  • Salt to taste
  • Olive oil (garnish)

Instructions

    Whip the yogurt and then add the finely diced cucumbers, grated garlic, crushed dried mint, salt and fresh lemon juice.

    Taste and adjust with more salt if necessary. Garnish with a drizzle of olive oil and fresh mint if you would like. Serve chilled and enjoy!
