Get ready to fall head over heels for this dreamy chocolate tahini smoothie, naturally sweetened with Medjool dates and perfectly balanced with a kiss of salt. Instead of bananas, it’s thickened with my secret smoothie weapon—frozen zucchini. Creamy, nourishing, and absolutely crave-worthy, this is the kind of frosty bev you’ll want on repeat for breakfast or snack. Bonus: it packs 7g of filling fiber and 12g of plant-powered protein!
📝 Ingredients
- 2 large or 3 small medjool dates, pitted
- 1 cup unsweetened soy milk (or milk of choice)
- 3/4 cup frozen chopped zucchini
- 1 tbsp cacao powder
- 1 tbsp tahini
- 1/8 tsp kosher salt
- 1/2 cup ice
- optional: 1 scoop collagen peptides* for extra protein
👨🍳 Instructions
- 1Place dates in a small bowl. Cover with very hot water and set aside to soften.
- 2Place milk in the blender jar first (I use a Nutribullet). Then add drained dates, frozen zucchini, cacao, salt, and optional collagen peptides, and tahini last (so it doesn't get stuck on the sides). Blend until smooth, then add ice and blend again until smooth.
