📝 Ingredients
- 2 tablespoons oil
- 1 medium yellow onion (finely chopped)
- 3 cloves garlic (minced)
- 500 grams pork tenderloin (cut into 2-inch strips)
- 2 tablespoons fish sauce
- 1 can diced tomatoes (14.5 ounces)
- 2 pieces bay leaves
- 1 cup water
- 1 large or 2 small red bell pepper (cut into strips)
- 1 cup frozen sweet peas or green peas (thawed)
- salt and pepper (to taste)
👨🍳 Instructions
- 1In a deep skillet, saute onion and garlic in oil over medium heat until limp and aromatic.
- 2Add the pork and then the fish sauce, cook until all sides are no longer pink. Pour in the diced tomatoes and add the bay leaves. Cover and cook for 5 minutes or until tomatoes can easily be mashed with the back of a spoon.
- 3Season with salt and pepper to taste.
- 4Pour 1 cup water and bring to a simmer. Cover and cook for 10-15 minutes or until pork becomes fork-tender and the liquids are again reduced.
- 5Then add the peas and bell pepper. Simmer for 5 minutes more just until they are cooked.
- 6Remove from heat and transfer to a serving plate.
- 7Serve hot with steamed rice.
