Carrot and Swede Mash

Ingredients
- 900 g Swede
- 900 g Carrots
- 50 grams Butter (or dairy-free alternative)
- Salt and Pepper
- Cream/or Milk
- Fresh Herbs
Instructions

Boil: Bring a pan of salted water to a boil.

Peel 900 g Swede and 900 g Carrots

Dice the carrots and swede into 1 inch cubes

Add to the boiling salted water

Cook for 20-25 minutes until soft enough to mash.

Drain the vegetables in a colander.

Pot: Put cooked carrots and swede cubes back into the pot.

Butter: Add 50 grams Butter to the pan. Season with Salt and Pepper

Mash to the consistency that you desire.

Splash: Add small splashes of warm Cream/or Milk or melted butter if required to get a creamier result.

Serve: Transfer to a serving dish

Serve with a sprinkle of Fresh Herbs and your choice of main.
