Wonton Soup

- 2 green onions (finely chopped)
- 1 teaspoon soy sauce
- 1 teaspoon oyster sauce
- 1/2 teaspoon sesame oil
- 1/4 teaspoon white pepper
- 1 package wonton wrappers
- 8 cups chicken broth (low sodium)
- 1 inch fresh ginger piece (sliced)
- 2 green onions (cut into 2-inch pieces)
- 2 tablespoons soy sauce (low sodium)
- 1 tablespoon sesame oil
- salt (to taste)

Make The filling: In a bowl, combine the ground pork, chopped green onions, soy sauce, oyster sauce, sesame oil, and white pepper. Mix until well combined.

Make The Wontons: Place a small amount of the pork mixture in the center of a wonton wrapper. Moisten the edges of the wrapper with water, fold it in half to form a triangle, and press the edges to seal. If you like, you can bring the two bottom corners of the triangle together, overlapping slightly, and press to seal. Repeat with the remaining wrappers and filling.

Make The Broth: In a large pot, bring the chicken broth, sliced ginger, and green onions to a boil. Gently add the wontons to the pot and cook for about 5 minutes, until they're cooked through and float to the surface.

Season the soup.: Remove the ginger and green onions. Season the soup with the soy sauce, sesame oil, and salt to taste.

Serve.: Ladle the soup and wontons into bowls. Top with additional chopped green onions and cilantro, if desired.
