Smoky Chipotle BBQ Sauce

This homemade chipotle BBQ sauce hits dark, smoky, sweet, tangy, and just hot enough, with dried chipotle chiles giving the sauce a deeper, earthier smoke.

Ingredients
- 2 cups ketchup
- 1 cup water
- 1/2 cup apple cider vinegar
- 5 tablespoons dark brown sugar
- 2 tablespoons honey
- 1 tablespoon fresh ground black pepper
- 1/2 tablespoon garlic powder
- 1/2 tablespoon ground mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon amchur powder (optional)
- 1 dried chipotle chile
- salt to taste

In a medium saucepan, combine all ingredients. You can optionally add the dried chipotle chile to a hot pan first to quickly toast it and bring out more flavor.

Bring the mixture to a boil, then reduce heat to a simmer.

Cook uncovered, stirring frequently, for 1 1/2 hours until dark, glossy, and reduced.
