Butternut Squash Fritters

Peel a butternut squash, then shred it into a bowl using a grater. Then add the remaining ingredients (except the oil) to the bowl. Mix together to form a batter. Set a large skillet on medium heat. Once hot, add the oil. Form 8 equal-sized patties using the batter. Add to the skillet. Cook on each side for 3 to 5 minutes, or until golden brown and cooked through. Place the fritters on a paper towel OR a cooling rack after cooking in the skillet.
