📝 Ingredients
- 2 lbs Russet Potatoes (peeled and sliced thinly)
- 2 tbsp Corn Starch
- 2 tbsp Cajun Seasoning (Store bought or homemade)
👨🍳 Instructions
- 1Preheat deep fryer to 300 degrees
- 2Cut fries into long thin strips
- 3Soak in a bowl of iced water for 30 minutes or so.
- 4Drain and dry the cut fries thoroughly.
- 5Toss fries in 2 tbsp corn starch plus half the seasoning mix.
- 6Lay dried fries on a parchment sheet lined sheet pan and let sit 20 minutes.
- 7Fry at 300 degrees F for 4 minutes.
- 8Remove and let sit for 10 minutes.
- 9Increase heat to 375 degrees.
- 10Fry again for 2-5 minutes depending on desired crispness.
- 11Season immediately with remaining cajun seasoning.
