📝 Ingredients

  • 1 pound mini Yukon gold potatoes (halved)
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup unsalted butter (melted)
  • 1 1/2 cups freshly grated Parmesan cheese

👨‍🍳 Instructions

  1. 1Preheat oven to 425°F (220°C).
  2. 2Wash potatoes and cut them in half. Using a sharp knife, score them into a diamond shape.
  3. 3Toss potatoes with olive oil, Italian seasoning, garlic powder, salt, and pepper. Set aside.
  4. 4In a bowl, mix grated Parmesan with melted butter until a thick paste forms.
  5. 5Spread the Parmesan mixture evenly onto a large baking dish.
  6. 6Press each potato half, cut-side down, into the cheese mixture.
