These savory oats are so good you’ll want them for breakfast, lunch, and dinner! This diabetes-friendly recipe showcases the versatility of oatmeal in a new and fresh way. Creamy avocado, eggs, and cheese come together with bell pepper and carrot in this filling one-bowl meal.
📝 Ingredients
- olive oil 2.00 tbsp divided 1 tbsp +2 tsp
- oatmeal 1.00 cup steel cut oats
- water 4.00 cup
- salt 0.13 tsp
- carrots 0.50 cup shredded
- red bell pepper 1.00 med small diced
- cottage cheese 0.50 cup low-fat cottage cheese unsalted
- egg substitute 1.50 cup
- black pepper 0.13 tsp
- avocado 1.00 large sliced into fourths
- sriracha 1.00 tsp
- Monterey Jack or pepper jack cheese 2.00 tbsp reduced-fat shredded
👨🍳 Instructions
- 1Heat 1 tablespoon extra-virgin olive oil over medium heat. Stir in the oats and stir until fragrant
- 2about 2 -3 minutes. Add the water and salt and cook over medium low heat for 20 minutes
- 3stirring occasionally until most of the liquid is absorbed.
- 4While the oats are cooking
- 5heat 1 teaspoon of olive oil in a medium skillet. Add the carrots and
- 6Take the oats off the heat and mix in the carrots
- 7pepper and cottage cheese
- 8stir well.
- 9In the skillet used to cook the vegetables
- 10add the remaining teaspoon of olive oil and heat over medium heat. Stir in the egg substitute and pepper and cook
- 11stirring until the eggs are light and fluffy. Remove from heat.
- 12Place ¾ cup of the oatmeal mix in a bowl. Top with ½ cup of the eggs and a few slices of avocado. Drizzle with sriracha and sprinkle with a bit of Monterey Jack cheese.
