  • beets 1.00 lbs tops trimmed
  • canola oil 2.00 tbsp
  • water 3.00 tbsp
  • honey 2.00 tsp
  • Dijon Mustard 2.00 tsp
  • baby spinach 10.00 oz
  • goat cheese 1.50 oz crumbled
  • pine nuts 0.25 cup

  1. 1Scrub the beets and trim and discard the tops. Place in a saucepan or pot and cover with water. Bring to a boil
