With coconut milk overnight oats in the fridge, there's no excuse for skipping breakfast! It's easy to make, dairy free, and full of wholesome ingredients.
📝 Ingredients
- 1/2 cup old fashioned rolled oats
- 3/4 cup light coconut milk
- 1 Tablespoon maple syrup
- 1/4 teaspoon vanilla extract
- 2 Tablespoons unsweetened coconut flakes
- 1 teaspoon chia seeds
- 2-3 Tablespoon mini chocolate chips
- 2-3 Tablespoons blueberries (fresh or frozen)
- 2-3 Tablespoons sliced or slivered almonds
👨🍳 Instructions
- 1Add the oats, coconut milk, maple syrup, chia seeds, vanilla extract, and coconut flakes to a wide mouth mason jar or any other container with lid.
- 2Use a spoon to fully mix all the ingredients.
- 3Cover and set in the refrigerator for at least 8 hours.
- 4Store in the refrigerator until you're ready to eat it, up to 4 days in advance. It can be eaten chilled or warmed in the microwave for 2 minutes. Stir the mixture again and enjoy!
