You'll be making this Greek Pasta Salad on repeat once you taste it! The best part is the creamy feta dressing bringing the veggies and the classic Greek flavors together
📝 Ingredients
- 1 lb / 450g short pasta - I’ve used casarecce
- 7 oz / 200g grape or cherry tomatoes
- 2 Persian or Lebanese cucumbers
- 1 small red onion
- 3.5 oz / 100g marinated jarred peppers
- 3.5 oz / 100g kalamata olives
- 1 can chickpeas - optional
- 2 oz / 55g feta cheese
- 1 bunch fresh parsley leaves
- 2 tablespoons extra virgin olive oil
- 5 oz / 140g feta cheese
- 1/3 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 2 teaspoons Dijon mustard
- 2 tablespoons cold water
- Salt and black pepper to taste
👨🍳 Instructions
- 1Cook the pasta in a large pot of salted water as per package instructions and drain, ensure to save some of the pasta cooking water. Allow to cool slightly
- 2In the meantime, prep the veggies. Slice the tomatoes in halves or quarters depending on their size, slice cucumbers into half moons, and finely chop the parsley and red onion. Slice the olives in half and cut the peppers into thin stripsOptional to soak the onion in a bowl of water for 10 minutes to remove harsh flavor
- 3Once the pasta has cooled but is still slightly warm, add to a large bowl with the parsley, 2 tablespoons of olive oil and a few spoons of the pasta cooking water. Stir through so the pasta is not stuck together
- 4Add the dressing ingredients to a blender and blend until a smooth creamy dressing. You can also use an immersion blender
- 5Once cooled, add the chickpeas to the pasta and pour over the dressing, stir through well until everything is nicely coated
- 6Add the tomatoes, cucumbers, onion, peppers and most of the olives, give it a really good toss together
- 7Garnish with the remaining olives and crumble over the feta cheese, and serve up your fresh delicious Greek Pasta Salad!
