Crepes are a delicious, nutritious way to start your day. They're light, delicious, and easy to make and make for an excellent breakfast, lunch, or snack.

📝 Ingredients

  • 1 cup flour
  • 1 cup milk
  • 1/4 cup water
  • 2 tablespoons unsalted butter (melted and cooled to room temperature)
  • 1/8 teaspoon salt
  • 2 eggs
  • 2 tablespoons sugar
  • 1 1/2 teaspoon vanilla extract

👨‍🍳 Instructions

  1. 1Blend - Add all your ingredients together into the bowl of the blender or food processor and blend on medium-high until the batter becomes silky smooth.
  2. 2Rest - Pour the batter into a medium bowl and cover with a tight-fitting lid or plastic wrap, and place in the refrigerator for at least 30 minutes or leave overnight. This step is very important because it allows the gluten to rest so that you will not end up with a tough crepe.
  3. 3Cook - Preheat a 9-12 inch skillet or a non-stick pan and grease with butter. Pour about 1/4 cup of batter into the pan, then tilt and rotate the pan to evenly spread the batter. Cook until the batter is set - about 1 to 2 minutes flip to the other side and cook for a couple of more seconds then remove from heat.
