📝 Ingredients

  • red onion 1.00 small finely chopped
  • lime juice 0.25 cup fresh-squeezed
  • plus 2 tbsp
  • Kosher Salt 0.25 tsp

  • skinless chicken breasts 1.00 lbs all fat discarded
  • chili powder 1.00 tsp
  • ground cumin 0.50 tsp
  • low sodium chicken broth 1.00 cup fat-free
  • lime 1.00 small cut into wedges for serving
  • 0.25 cup chopped

👨‍🍳 Instructions

  1. 1In a medium bowl
  2. 2stir together the onion
  3. 3lime juice
  4. 4and salt. Cover with plastic wrap and set aside at room temperature for 3 to 5 hours
  5. 5while the chicken cooks.
  6. 6Place the chicken in a medium slow cooker. Sprinkle with the chili powder and cumin. Pour the chicken broth around the chicken. Cover and cook on low for 3 to 5 hours or until chicken reaches a temperature of 165°F.
  7. 7Remove the chicken from the slow cooker and using the tines of two forks
  8. 8shred the chicken. Place the chicken in a bowl and toss with the onion lime mixture. Serve with lime wedges and chopped cilantro sprinkled on top.
  9. 9Electric pressure cooker variation: Prepare the onion lime mixture as above. Place the chicken in the pressure cooker. Sprinkle with chili powder and cumin. Pour the chicken broth around the chicken. Secure the lid. Cook on high pressure for 6 minutes. Allow the pressure to release naturally for 5 minutes
  10. 10then quickly release the remaining pressure. Proceed as above.
