Ingredients

  • 1 cup rolled oats (or quick oats)
  • 2 ripe bananas
  • 1/4 cup chocolate chips
  • optional 4 tbsp almond or peanut butter
  • optional 1/8 tsp salt

Instructions

  1. 1

If baking the cookies, preheat the oven to 350 degrees Fahrenheit.

  2. 2

First mash the bananas with a fork in a large mixing bowl.

  3. 3

Add the oats, chocolate chips, and any optional ingredients (such as nut butter or salt), and stir to form an eggless oatmeal cookie dough.

  4. 4

Refrigerate the dough until firm enough to scoop out with a spoon or cookie scoop.

  5. 5

For no bake banana cookies, simply freeze the cookies until hard. For baked cookies, place the unbaked cookie dough balls on a parchment lined baking sheet and bake on the oven's center rack for 20 minutes.

  6. 6

Let the cookies cool on a wire rack before handling, as they firm up while cooling.
