This super simple bean salad is easy to make and great as an antipasti, potluck side or even a lunch.

📝 Ingredients

  • 15.5 oz cooked cannellini beans (15.5oz is 1 regular can/tin)
  • 5 oz tuna in olive oil (5oz is 1 regular can/tin)
  • 1/4 red onion (or a little less if onion is large)
  • 2 tbsp chopped parsley
  • 2 tbsp olive oil
  • 1/2 lemon juice (ie juice from 1/2 a lemon)

👨‍🍳 Instructions

  1. 1Drain and rinse the beans and drain excess oil from the tuna. Finely chop the onion into pieces roughly the same size as the beans, or smaller. Chop the parsley relatively finely.
  2. 2Place the beans, flaked up tuna, onion and parsley in a bowl. Drizzle over the olive oil and lemon juice. Season with some black pepper and salt then stir everything to mix well. Taste and adjust the seasonings as needed - it may need a little more salt, pepper, oil or lemon to your taste.
