Boston Cream Pie Parfaits

Turn classic Boston Cream Pie into fun individual layered desserts. Great to make ahead for parties!
Ingredients
- 3/4 cup butter (softened)
- 1 1/2 cup granulated sugar
- 3 whole eggs
- 2 teaspoon vanilla extract
- 2 1/2 cup all-purpose flour
- 2 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cup milk
- 1 (3.4 oz) box vanilla instant pudding mix
- 2 1/2 cups cold milk
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 3/4 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract

--- To Make Cake Layer ---

Preheat oven to 350 degrees. Spray or line a 9x13 inch pan with parchment paper. Set aside.

In a bowl whisk together flour, baking powder, and salt. Set aside.

In an electric mixer cream together butter and sugar until light and fluffy. Beat in eggs and vanilla until smooth.

Alternate mixing in flour mixture and milk until well combined and smooth. Pour into prepared pan. Bake for 18-20 minutes until a tester comes out clean. Remove from oven and cool completely.

--- To Make Pudding Layer ---

In a large bowl whisk together pudding and cold milk for 2 minutes. Let stand for 5 minutes. Meanwhile in an electric mixer beat heavy cream until soft peaks. Mix in powdered sugar and vanilla. Beat cream until stiff peaks.

Fold whipped cream into pudding mixture until combined. Set in fridge for 1 hour to set up completely.

--- To Make Chocolate Layer ---

Heat heavy cream to a simmer, do not boil. Add chocolate chips and let stand for 2 minutes. Whisk until chocolate is completely melted and smooth.

In an electric mixer beat heavy cream until soft peaks. Mix in powdered sugar and vanilla. Beat cream until stiff peaks.

Cut cake into cubes. Place a layer of cake in the bottom of 12 mason jars or cups. Spoon a couple tablespoons of pudding mixture over the cake. Drizzle about a teaspoon of chocolate mixture over the pudding. Add another layer of cake, pudding and chocolate. Top with whipped cream and a little drizzle of chocolate.
