Vegan Mug Brownies

Ingredients
- 3 tbsp all-purpose flour
- 1/4 tsp baking powder
- 2 tbsp sugar
- 1 tbsp dark cocoa powder
- 1 tbsp coconut oil (or substitute sunflower or canola oil)
- 2 tbsp almond milk (or soy milk)
- 1/4 tsp vanilla extract
- 1/8 tsp salt
- 1 tbsp dark chocolate chips
- 1 tbsp chopped walnuts

Add Dry: Place dry ingredients (flour, sugar, cocoa powder, salt, and baking powder) in a large microwave-safe mug.

Mix: Whisk to combine.

Add Wet: Add almond milk, oil, and vanilla extract and stir to combine well.

Add Extras: Fold in the chocolate chips and walnuts.

Microwave: Place mug in the microwave and cook for 60 seconds on high power.

Cooking Time: Check the mug brownie. If it is still wet, cook for another 30 seconds. Usually, they remain just a bit raw in the centre after the first 60 seconds, and that’s a clue to stop; if not, it could end up overcooked and dry.
