Ingredients

  • 1/2 pound rotini pasta
  • 2 cups diced English cucumber
  • 1 green bell pepper (diced)
  • 2 cups cherry tomatoes (halved)
  • 1 cup kalamata olives (pit removed, roughly chopped)
  • 1/3 cup red onions (thinly sliced)
  • 1 cup feta cheese (crumbled or cubed)
  • 1/4 cup Italian parsley, finely chopped
  • 2 tablespoons chopped dill
  • 1 cup canned chickpeas (drained and rinsed)
  • 1/2 cup extra virgin olive oil
  • Juice of 1 lemon
  • 2 teaspoons red wine vinegar (plus more to taste)
  • 1 teaspoon dried oregano
  • 1 clove garlic, fresh (finely minced or grated)
  • Salt and pepper (to taste)

Instructions

    In a large pot with generously salted water, cook pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
