Pata and Mixed Beans

Ingredients

  • 1 1/2 kg pork pata (pork leg), cut into sections
  • 1 cup dry cannellini beans, soaked overnight and drained
  • 1 cup dry black beans, soaked overnight and drained
  • 1 bunch sweet potato leaves
  • 1 large onion, chopped
  • 1 whole head garlic, minced
  • oil
  • fish sauce
  • water
  • salt
  • freshly ground black pepper

Instructions

    Heat the oil in a large pot over medium-high heat. Add garlic and sauté until golden brown and fragrant. Remove toasted garlic from the pot then set it aside.

    Add the onions then continue to sauté until onions turn soft.

    Add the pork pata, black beans, cannellini beans and salt to the pot then pour enough water to cover the meat. Bring to a boil, then reduce the heat to low and let it simmer for about 2 or until the meat is very tender.

    Once the pork pata is tender, add the toasted garlic and sweet potato leaves then simmer for 2 more minutes then season with fish sauce and freshly ground black pepper to taste.
