Mini Lemon Meringue Tartlets

Mini lemon meringue tartlets are the perfect dessert for a crowd. They're bite-sized mini pies, delicate to eat, and so easy to make.
Ingredients

- 113 g (1/2 cup) cold unsalted butter, cubed

- 1 large whole egg
- 150 g (3/4 cup) granulated sugar
- 120 g (1/2 cup) fresh lemon juice
- 2 tablespoon lemon zest
- 1/4 teaspoon salt
- 86 g (6 Tablespoons) unsalted butter, cold and cubed
- 3 large egg whites
- 150 g (3/4 cup) granulated sugar
