  • 312 g (2 1/2 cups) all-purpose flour or pastry flour

  • 3/4 teaspoon salt
  • 225 g (1 cup) butter, cold
  • 120 g (1/2 cup) natural yogurt, cold (see notes for substitutions)

  • 340 g (12oz) chopped strawberries, fresh or frozen
  • 50 g (1/4 cup) granulated sugar
  • 2 Tablespoons cornstarch
  • 1 Tablespoon lemon juice
  • 1/2 Tablespoon lemon zest
  • 1/8 teaspoon salt
  • Large egg + 1 Tablespoon water, whisked
  • Coarse sugar
