📝 Ingredients

  • 4 ea portabello mushroom (large, approx. 350g)
  • 6 tbsp balsamic vinegar (90ml)
  • 2 tbsp olive oil (30ml)
  • 2 tsp dijon mustard (10ml)
  • 1/2 tsp ground coriander (1g)
  • 1/2 tsp salt (3g)
  • 1/2 tsp ground black pepper (1g)
  • 1 ea yellow onion (large, thinly sliced)
  • 2 tbsp olive oil (30ml)
  • 3 clove garlic (minced, approx. 15g)
  • 3 cup baby arugula (35g, washed and dried)
  • 4 ea vegan burger buns

👨‍🍳 Instructions

  1. 11. Rinse and dry or gently wipe off the mushrooms with a damp paper towel. Trim the stem so the mushroom cap can rest flat. With a fork, prick the top of the mushroom caps several times.
  2. 22. In a mixing cup or small bowl, mix the balsamic vinegar, 2 tbsp/30ml olive oil, mustard, oregano, coriander, salt, and pepper. Whisk together until well blended.
  3. 33. Add the mushrooms to a large ziplock bag. Pour in the marinade. Close and move everything around to completely coat the mushrooms. Place at room temperature for 20-30 minutes.
  4. 44. Slice the onion into ¼”/6mm quarter circles. Mince the garlic.
  5. 55. Heat 2 tbsp oil in a large frying pan on medium. Add the onion and garlic. Cook for 12-15 minutes, stirring regularly until golden and fragrant.
  6. 66. Line a baking sheet with foil or parchment paper. Turn the oven to broil and place the oven rack in the upper third (but not directly under the heating element). Place the mushrooms cap side up on the baking sheet.
  7. 77. Flip and cook for 5 minutes per side under the broil until barely starting to char.
  8. 88. Slice the buns. For best results drizzle a bit of olive oil and toast for a minute or two under the broiler.
