Ingredients

  • 1 lb ground beef (93% lean)
  • 2 Tablespoons sesame oil (or coconut oil)
  • 1 lb broccoli (cut into florets)
  • 2 teaspoons sesame seeds (optional garnish)
  • 1 teaspoon fresh ginger (grated)
  • 3 cloves garlic (minced)
  • 1/4 cup rice wine vinegar (or lime juice)
  • 1/2 cup coconut aminos (or soy sauce)
  • 3 Tablespoon honey (or sweetener of choice)
  • 1 Tablespoon arrowroot starch
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Prepare the Sauce: In a medium bowl, combine all the stir fry sauce ingredients. Stir until everything is fully dissolved. Set the sauce aside for later use.

  2. 2

Cook broccoli: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the broccoli florets, partially cover the skillet with a lid and sauté for 4-5 minutes. Stir or toss the broccoli several times until they turn bright green and become crisp-tender. Remove the broccoli from the pan and set it aside.Tip: If you prefer softer broccoli, add 2 tablespoons of water to the skillet before covering with the lid. This will steam the broccoli for a more tender texture.

  3. 3

Cook ground beef: Increase the heat to high and add 1 tablespoon of oil to the same skillet. Spread the ground beef and sauté for 2 minutes, breaking it up while it cooks, or until just cooked through.

  4. 4

Combine beef, broccoli and sauce: Pour the prepared sauce into the skillet with the beef. Reduce the heat to medium-low and let the sauce simmer for 3-4 minutes, allowing it to thicken. Return the broccoli to the skillet and stir everything together until well combined.

  5. 5

Serve the Ground Beef and Broccoli Stir Fry over a bed of white rice. Enjoy!
