📝 Ingredients

  • 4 salmon filets
  • 2 Tablespoon extra virgin olive oil
  • 1 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • salt and pepper
  • 1 mango (peeled & cubed)
  • 1 avocado (cubed)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 of a large red onion (finely chopped)
  • Juice of 1 lime
  • extra virgin olive oil (to taste)
  • salt and pepper (to taste)

👨‍🍳 Instructions

  1. 1Preheat oven to 450 F and line a baking sheet with parchment paper.
  2. 2Prepare salmon: In a bowl, mix together the olive oil, paprika, cumin, thyme, oregano, onion powder, garlic powder, chili powder, cayenne pepper, salt, and pepper. Brush the spice mixture on both sides of the salmon filets. (or only on top if it's with the skin on)
  3. 3Bake: Place the salmon filets on a baking sheet and bake in the preheated oven for about 13 minutes, or until the salmon starts to flake easily with a fork.
  4. 4Make salsa: While the salmon is baking, combine the mango, avocado, cherry tomatoes, red onion, lime juice, extra virgin olive oil, salt, and pepper in a bowl. Mix and refrigerate until ready to serve.
