This creamy Portuguese flan is made with a simple mixture of milk, eggs, lemon zest and sugar. Only takes 30 minutes to bake in the oven!
📝 Ingredients
- 5 large eggs
- 500 ml (about 2 cups) milk
- Zest of one lemon
- 100 grams (1/2 cup) granulated sugar
- 200 grams (about 1 cup) granulated sugar to caramelize
👨🍳 Instructions
- 1Preheat the oven to 180ºC (350ºF).
- 2Pour 200 grams (about 1 cup) sugar in a pudding mold (18 x 10 centimeters (7 x 4 inches)). Place the pudding mold on the stove over low heat until caramelize the sugar (go turning the pudding mold until stays completely caramelized).
- 3Using an electric mixer, beat on medium speed the eggs, sugar and the lemon zest until obtain a homogeneous mixture. Pour the milk and mix about 2 to 3 minutes until it's nicely incorporated.
- 4Pour the mixture into the pudding mold and bake for about 30 minutes until golden (the time depends on the oven).
- 5Remove the flan from the oven and allow to cool completely inside the pudding mold.
- 6Place a serving plate over the pudding and flip.
