Get a delicious Mexican dinner on the table in less than 30 minutes with this easy chicken fajitas recipe. Made from scratch with a homemade fajita seasoning, the chicken and bell peppers are loaded into tortillas with your favorite toppings for one tasty bite.
📝 Ingredients
- 1.5 lbs chicken breast
- 3 Bell peppers (green, yellow, red, sliced into 1/4-inch strips)
- 1 large onion (thinly sliced)
- 2 tablespoons olive oil
- 1/2 lime
- Fresh cilantro
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper or less (to taste)
👨🍳 Instructions
- 1Season the chicken. Cut the chicken breasts in half horizontally and then in strips. Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it in.
- 2Cook the chicken. Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for about 5 minutes on each side. Then remove them from the pan and let them rest for a few minutes covered with foil.
- 3Saute the bell peppers and onion. Saute bell peppers and onion in the same skillet over medium heat for a few minutes until caramelized.
- 4Mix together. Add the chicken back into the skillet, squeeze fresh lime juice on top and stir everything together.
- 5Wrap it up. Serve immediately with tortillas and extra toppings.
