Chinese Egg Fried Rice - with peas, ham and spring onion. The perfect accompaniment to all your Chinese dishes. Make it with or without soy sauce - the choice is yours.

📝 Ingredients

  • 3 cups Cooked Rice (equivalent to 1 cup raw Basmati rice)
  • 1 large Egg ( lightly beaten)
  • 1/2 cup Frozen Peas
  • 1/2 cup Chopped Ham
  • 2 medium Spring Onions (finely chopped)
  • 2 tablespoons Soy Sauce (optional)

👨‍🍳 Instructions

  1. 1Cook the rice according to the instructions on the package or you can follow the instructions for my Microwave Rice
  2. 2Allow the rice to cool
  3. 3Pour the beaten egg into a non-stick wok, and stir-fry stirring continuously until the egg is dry and in small pieces (do not add any oil or butter).
  4. 4Add the cooled rice to the egg in the wok and continue to stir-fry until well mixed
  5. 5If you are using soy sauce, mix it through the rice now.
  6. 6Add the remainder of the ingredients and stir until well combined
  7. 7Leave on the heat and stir continuously until heated through
  8. 8Tip into a serving bowl and garnish with a few chopped spring onions
