Don't throw away that turkey carcass this Thanksgiving, instead, use it to make your own homemade turkey stock. Whether you make it on the stovetop or the Instant Pot, this easy recipe makes the most out of your leftovers so that nothing goes to waste.

📝 Ingredients

  • 1 turkey carcass or bones from roasted turkey
  • 3 cups vegetables or vegetable scraps (carrots, onions, celery, garlic, parsley, sage, thyme, etc)
  • 1 Tablespoon kosher salt
  • 1 teaspoon peppercorns
  • 2 bay leaves
  • 10 cups cold water (or enough to cover the bones and vegetables.)

  1. 1--- Instant Pot instructions ---
  2. 2Place all ingredients in the Instant Pot and turn the valve to ‘Seling’.
  3. 3Set for High Pressure for 2 hours.
  4. 4Let pressure release naturally.
  5. 5Use tongs to discard solids and strain stock into a large bowl using a fine mesh strainer and cool.
  6. 6Divide between containers or glass jars, and store for later use, or use immediately.
  7. 7--- Stovetop instructions ---
  8. 8Place all ingredients in a large pot and bring to a boil over medium high heat.
  9. 9Once boiling, reduce the heat to maintain a simmer. Simmer for about 3 1/2 to 4 hours.
  10. 10Use tongs to discard solids and strain stock into a large bowl using a fine mesh strainer and cool.
  11. 11Divide between containers or glass jars, and store for later use, or use immediately.
