Ingredients

  • 2 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1/4 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tbsp Sugar
  • 6 tbsp Butter (unsalted, chilled, cubed)
  • 3/4 cup Buttermilk (or Milk )
  • 1 tbsp Rosemary Leaves (finely chopped)
  • 1 tbsp Thyme leaves (fiinely chopped)
  • 1 cup Cheddar cheese (grated)
  • 1/4 cup Parmesan Cheese (grated)

Instructions

  1. 1

    Oven - Preheat the oven at 450°F / 230°C Gas Mark 8

  2. 2

Dry ingredients - Combine the flour, baking powder, baking soda, salt, and sugar in a large bowl. Add the chopped herbs and combine well.

  3. 3

Cut - Add the cold butter into the flour mixture using a pastry blender or a fork until it resembles a coarse breadcrumb consistency.

  4. 4

Cheese - Add the Parmesan and cheddar cheeses. Combine, but do not overmix. Then, add the buttermilk and combine well with a spoon or spatula.

  5. 5

Fold - Using a rolling pin, lightly roll the dough. Fold the dough into thirds, bringing the two sides over the center. Then, the top and bottom sides into the middle. Just like closing a box!! Repeat this once more or twice more to create more folds.

  6. 6

Cut - Roll the dough again to about 3/4-inch thickness, and using a 3-inch cookie or biscuit cutter, cut about 6 to 8 biscuits.

  7. 7

Finish - Line the baking tray with parchment paper or silicone. Place the biscuits on the prepared baking tray. Brush the tops of the biscuits with milk or melted butter.

  8. 8

Bake for 15 to 17 minutes until the top is lightly golden brown. Remove from the oven and cool on the tray for 5 minutes.

  9. 9

    Serve warm.
