📝 Ingredients

  • 16 ounces dried mixed beans
  • 1 small onion (diced)
  • 2 carrots (chopped)
  • 1 tablespoon bacon fat (substitute butter or olive oil)
  • 2 tablespoons white miso paste
  • 1 bay leaf
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon toasted cumin seeds
  • 1 ham bone or smoked pork hock
  • 6 ounces chopped ham (optional)
  • 6 cups chicken stock
  • 1 cup water
  • 1-15 ounce can diced tomatoes
  • 1-2 teaspoons salt (optional)

👨‍🍳 Instructions

  1. 1Sauté the onions in the bacon fat until softened, about 2-3 minutes, using the Instant Pot sauté function.
  2. 2Add the remaining ingredients (except tomatoes and salt) and stir to combine.
