Baked tilapia in foil is an easy, flavorful meal option. Fillets of tilapia are layered with vegetables and herbs, wrapped in foil, and baked to perfection.

📝 Ingredients

  • 4 tilapia fillets
  • 4 tablespoons green seasoning (or use salt and black pepper to taste)
  • 1/2 cup corn
  • 1/2 cup okra (sliced)
  • 1/2 cup carrots (sliced)
  • 4 baby potatoes (thinly sliced)
  • 4 sprigs thyme
  • 8 sprigs chive (chopped)
  • 1/4 cup parsley (chopped)
  • Butter (for each packet)

👨‍🍳 Instructions

  1. 1Preheat the oven to 350°F (175°C).
  2. 2Place a sheet of foil on a flat surface and spread 1 tablespoon of butter in the center.
  3. 3Place one tilapia fillet on the buttered area.
  4. 4Top with a portion of the corn, potatoes, okra, carrots, thyme, chives, and parsley (divide evenly across 4 packets).
  5. 5Fold the long sides of the foil over the fish, roll down to seal, then roll in the short sides to close the packet completely.
  6. 6Place the foil packet on a baking tray. Repeat for the remaining fillets.
  7. 7Bake in the oven for 25 minutes.
