Ingredients
- 1 large cucumber (thinly sliced)
- 1 small garlic clove (minced)
- 2-3 scallions (thinly sliced)
- 1 Tablespoon chopped fresh cilantro
- 3 Tablespoons rice vinegar
- 2 Tablespoons sesame oil
- 2 Tablespoons canola oil ({or other neutral oil, such as sunflower, grapeseed, or avocado oil))
- 1 Tablespoon soy sauce
- 1 teaspoon granulated sugar
- 1 teaspoon minced fresh ginger
- 1/8 teaspoon crushed red pepper flakes
- Coarse salt and freshly ground pepper (to taste)

In a medium bowl, combine cucumber, garlic, scallions and cilantro.

In a separate bowl, whisk vinegar, sesame oil, canola oil, soy sauce, sugar, garlic, ginger, red pepper flakes, salt and pepper. Pour over the cucumber mixture and toss to coat evenly.
