📝 Ingredients

  • 4 slices sourdough bread
  • 2 cans tuna in olive oil (4 oz / 110 grams each)
  • 1/2 cup mayonnaise (120 grams)
  • 1 tbsp dijon mustard (15 grams)
  • 1 shallot finely chopped
  • 1 clove garlic finely grated or minced
  • 1/2 tsp sweet smoked Spanish paprika (1.25 grams)
  • 1 tsp lemon juice (5 ml)
  • 2 tbsp chopped fresh parsley (8 grams)
  • 1 tomato
  • 1 cup shredded Manchego cheese (120 grams)
  • sea salt & black pepper
  • chopped parsley for garnish

👨‍🍳 Instructions

  1. 1Lightly toast the slices of bread in a toaster, then place them in a baking tray or baking pan that's lined with foil paper, all in a single layer
  2. 2Drain the cans of tuna into a fine sieve with a bowl underneath, gently flake the tuna, then add into a large bowl, along with the mayonnaise, dijon mustard, shallot, garlic, paprika, lemon juice and parsley, season with sea salt & black pepper, mix together until well mixed
  3. 3Evenly spread the tuna mixture over the 4 slices of toasted bread
  4. 4Thinly slice the tomato, add a couple of slices over each bread, then top off with the shredded cheese, making sure to cover the entire surface
  5. 5Add into a preheated oven, broil only option (top heat), between 4 to 5 minutes or until the cheese is fully melted, then remove from the oven
  6. 6Sprinkle each one with chopped fresh parsley, serve at once, enjoy!
