Peach Smoothie

Making refreshing and creamy summery drinks like this Peach Smoothie is one of my little joys during summer mornings when I need a quick ten-minute breakfast on the go. I make it with lots of fresh peach flavor, zesty lime, and creamy vanilla, which makes it the perfect summer drink to enjoy by the pool, after a workout, or as a healthy snack that’s totally kid-friendly.
Ingredients
- 2 cups peach nectar juice (no sugar added)
- 1 cup coconut milk
- 1 banana (fresh or frozen - sliced)
- 1 cup vanilla Greek yogurt
- 1 1/2 cups peach chunks (fresh or frozen or canned (if canned, choose in juice not syrup))
- 1 teaspoon vanilla extract
- Zest of 1 lime
- Juice of 1 lime
- Lime slices and mint sprigs
Instructions

Add all the smoothie ingredients to the blender and start on a low speed.

Gradually turn it up until everything blends into a creamy drink completely smooth.

Make a little slit in a lime slice and slide it onto the rim of each glass.

Pour into two glasses and serve, topped off with a sprig of fresh mint if desired.
