This delicious Nigerian Rice and Beans dish is a filling combination of three ingredients. Serve it with beef stew, red stew, or plantain.

📝 Ingredients

  • 2 cups of white rice
  • 1 cup of brown black eyed beans (or oloyin beans)
  • Salt to taste
  • 3-4 cups of water

👨‍🍳 Instructions

  1. 1Wash the beans thoroughly and remove any visible stones or dirt.
  2. 2Place the beans in a pot, add two cups of water, and season with salt to taste. Bring the water to a boil and cook the beans for 10-15 minutes, or until they are firm.
  3. 3Rinse the rice three times in a large bowl to remove excess starch. Then, add the rice to the pot and add two cups of water, or enough to cover the beans and rice. Stir well.
