Creamy, cheesy, and comforting, this crock pot vegetable casserole is made with California medley frozen vegetables, Campbell’s cheddar soup, and plenty of melted cheese. An easy vegetable side dish that’s perfect for holidays, potlucks, or family dinners.

📝 Ingredients

  • 24 oz frozen California medley mixed vegetables (broccoli, carrots and cauliflower, kept frozen)
  • 10.5 oz Campbells cheddar condensed soup
  • 1/2 cup chicken broth
  • 2 cups shredded cheddar cheese (divided)

👨‍🍳 Instructions

  1. 1Add frozen vegetables, condensed soup, chicken broth and 1 cup of cheese to the slow cooker and mix ingredients well. Cover and set to low.
  2. 2Cook on low for 1 hour. After one hour, stir and continue to cook for another hour.
  3. 3Stir and top with remaining 1 cup cheese. Turn slow cooker to high for 15 minutes or until the cheese on top is completely melted.
